I actually knew Sam LaRobardiere back when this was just an idea—something he talked about, something he was building from the ground up. There was a vision behind it, but like most dreams, it took time, risk, and a lot of work to bring it to life.
Now, with multiple locations across Northern California—including the airport, downtown on California Street, the Mount Shasta Mall, and even up in Mount Shasta—it’s grown into something really special.
What stands out most about Theory Coffee isn’t just the quality—it’s the intention behind it.Sam has always been the culture and coffee guy—focused on the experience, the energy, and how a place makes people feel—but he also set out to serve the best coffee possible.
And he does put in the work.
Nothing about Theory feels accidental. From the way the space feels when you walk in, to the consistency from one location to the next, there’s a level of care and effort behind it that you can see—and taste.
That shows up in the coffee.
Theory Coffee has earned recognition at a national level, including awards at the Golden Bean Roasting Competition and placements in the U.S. Roasting Championships. That kind of recognition comes from real dedication—dialing in roasting profiles, sourcing quality beans, and staying consistent.
Sam is also a certified Q Grader, essentially the coffee world’s version of a sommelier. Every cup is evaluated at an expert level—flavor, aroma, body—all of it considered.
But it’s not just the coffee.
The food side holds that same standard, especially the French-inspired pastries. There’s a noticeable difference—these aren’t just add-ons to the menu, they’re part of the experience. Thoughtful, well-executed, and elevated in a way that matches what’s happening in the cup.
Sam is also connected to the broader coffee community through initiatives like the Podium Coffee Club, staying engaged with other top roasters and continuing to refine his craft. What I Learned About the Perfect Cup
One of my favorite parts of talking with Sam was getting a better understanding of what actually goes into making a great cup of coffee at home.
It’s easy to think it’s just the beans—but there’s a little more to it than that.
He shared a few simple things that can make a big difference:
Water temperature matters — ideally between 200–205°F
Brew time — about 3 minutes (depending on your method)
A good grinder — freshly ground beans make a noticeable difference
Use a scale — measuring your coffee and water helps with consistency
And of course… start with quality coffee
What stood out to me is that none of this felt overly complicated—it’s just about being a little more intentional.
It made me realize that a great cup of coffee isn’t just something you get at a coffee shop—it’s something you can create at home with a few simple adjustments.
There’s something special about watching a vision grow into something that serves a whole community—especially when you know how much work went into it.
For me, Theory Coffee is one of those places I keep coming back to.
